Chicken Salad

Ingredients
- SALAD:
- 4 cups cubed chicken breast
- 1 cup diced celery
- ½ cup diced green pepper
- 1 cup seedless green grapes
- ½ cup slivered almonds
- ½ cup sliced pimiento-stuffed green olives
- 1 cup 20 oz. chunk pineapple (drained, save juice)
- 1 cup 11 oz. mandarin oranges (drained)
- DRESSING:
- 1-1/2 cups salad dressing or mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon finely chopped yellow onion
- 3 tablespoons pineapple juice (saved from above)
Instructions
- Mix all ingredients. Stir in dressing several hours before serving. Refrigerate.
