Chicken Salad

Ingredients
  • SALAD:
  • 4 cups cubed chicken breast
  • 1 cup diced celery
  • ½ cup diced green pepper
  • 1 cup seedless green grapes
  • ½ cup slivered almonds
  • ½ cup sliced pimiento-stuffed green olives
  • 1 cup 20 oz. chunk pineapple (drained, save juice)
  • 1 cup 11 oz. mandarin oranges (drained)
  • DRESSING:
  • 1-1/2 cups salad dressing or mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon finely chopped yellow onion
  • 3 tablespoons pineapple juice (saved from above)

Instructions
  1. Mix all ingredients. Stir in dressing several hours before serving. Refrigerate.
